Notes

Ingredients 

  • 8 large eggs
  • 1 pound turkey breakfast sausage (mild or spicy, depending on your preference) 
  • 1 ½ cups whole milk (or heavy cream for a richer flavor)
  • 24 oz frozen tater tots (about ¾ of a 32 oz bag)
  • 2 cups shredded cheddar cheese
  • 1 ½ teaspoons salt
  • 1 teaspoon black pepper
  • ¼ teaspoon garlic powder
 

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly spray a 9x13-inch baking dish with non-stick cooking spray.
  2. Cook the sausage:
    • In a skillet over medium heat, cook the sausage, breaking it into small crumbles.
    • Once fully cooked, drain excess grease and set sausage aside.
  3. Prepare the egg mixture:
    • In a large bowl, whisk together the eggs, milk (or heavy cream), salt, pepper, and garlic powder until well combined.
  4. Assemble the casserole:
    • Layer frozen tater tots evenly on the bottom of the baking dish.
    • Sprinkle the cooked sausage over the tater tots.
    • Add cheddar cheese on top of the sausage.
    • Pour the egg mixture evenly over everything.
  5. Bake:
    • Cover the dish with foil to prevent the edges from overcooking.
    • Bake for 40 minutes.
    • Remove the foil, and continue baking for an additional 15-20 minutes, or until the center is fully set and eggs are cooked through.
    • Tip: Check for doneness around 40-45 minutes, as oven times may vary.
  6. Serve hot:
    • Enjoy as is, or top with sour cream, salsa, diced tomatoes for extra flavor!
 

Notes

  • You may need to buy a 32 oz bag of tater tots and use only part of it (about 24 oz).
  • Perfect to prep the night before and bake fresh in the morning!
  • Store leftovers in the fridge for up to 3 days and reheat as needed.
