Ingredients
8 large eggs
1 pound turkey breakfast sausage (mild or spicy, depending on your preference)
1 ½ cups whole milk (or heavy cream for a richer flavor)
24 oz frozen tater tots (about ¾ of a 32 oz bag)
2 cups shredded cheddar cheese
1 ½ teaspoons salt
1 teaspoon black pepper
¼ teaspoon garlic powder
Instructions
Preheat the oven
to 375°F (190°C). Lightly spray a 9x13-inch baking dish with non-stick cooking spray.
Cook the sausage
:
In a skillet over medium heat, cook the sausage, breaking it into small crumbles.
Once fully cooked, drain excess grease and set sausage aside.
Prepare the egg mixture
:
In a large bowl, whisk together the eggs, milk (or heavy cream), salt, pepper, and garlic powder until well combined.
Assemble the casserole
:
Layer frozen tater tots evenly on the bottom of the baking dish.
Sprinkle the cooked sausage over the tater tots.
Add cheddar cheese on top of the sausage.
Pour the egg mixture evenly over everything.
Bake
:
Cover the dish with foil to prevent the edges from overcooking.
Bake for 40 minutes.
Remove the foil, and continue baking for an additional 15-20 minutes, or until the center is fully set and eggs are cooked through.
Tip: Check for doneness around 40-45 minutes, as oven times may vary.
Serve hot
:
Enjoy as is, or top with sour cream, salsa, diced tomatoes for extra flavor!
Notes
You may need to buy a 32 oz bag of tater tots and use only part of it (about 24 oz).
Perfect to prep the night before and bake fresh in the morning!
Store leftovers in the fridge for up to 3 days and reheat as needed.
