Red, White & Blue Cheesecake Stuffed Strawberries

Notes

Ingredients:
  • 1 pint fresh strawberries, washed and dried
  • 4 oz. cream cheese, softened
  • 1 cup confectioners’ sugar
  • 1 tsp almond extract (or substitute with vanilla extract)
  • Fresh blueberries
 
Instructions:
Prepare the Strawberries:
  1. Wash and thoroughly dry the strawberries.
  2. Cut off the green tops so they can sit flat on a plate.
  3. Carefully cut an ‘X’ into the pointed end of each strawberry, making sure not to cut all the way through.
Make the Cheesecake Filling:
  1. In a mixing bowl, combine softened cream cheese, confectioners’ sugar, and almond extract.
  2. Mix well until smooth and creamy.
Fill the Strawberries:
  1. Transfer the cheesecake mixture into a piping bag or a zip-lock bag with the corner snipped off.
  2. Carefully pipe the filling into the center of each strawberry.
Garnish & Serve:
  1. Top each stuffed strawberry with a fresh blueberry for a patriotic touch.
  2. Serve immediately or refrigerate for up to 3 days.
 
Serving Suggestions & Variations:
  • Drizzle with melted chocolate for an extra indulgent treat.
  • Add crushed graham crackers on top for a "cheesecake crust" effect.
