Ingredients

Vinaigrette Dressing

  • ¼ cup olive oil
  • ¼ cup balsamic vinegar
  • 2–3 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper

Pasta Salad

  • ½ pound dried pasta (farfalle or another small shape works well)
  • 8 ounces mozzarella pearls (or cubed fresh mozzarella)
  • 2 cups grape tomatoes, halved
  • ¼ cup fresh basil leaves, thinly sliced
  • Salt and pepper, to taste
 

Instructions

  1. In a small bowl or a jar with a lid, combine the olive oil, balsamic vinegar, lemon juice, garlic, Italian seasoning, salt, and pepper. Whisk together or shake until fully blended. Set aside.
  2. Prepare the pasta according to the package instructions. Once cooked, drain and rinse under cold water.
  3. In a large mixing bowl, combine the cooled pasta, tomatoes, mozzarella, and basil. Pour the vinaigrette over the top and toss to coat evenly. Taste and adjust seasoning as needed. Serve right away.
 
Notes
For advance prep, mix the salad with about ¾ of the dressing, then cover and refrigerate. Keep the remaining dressing separate. When ready to serve, add the rest of the dressing, toss again, and serve.
