Notes

Ingredients:

  • 1 cup butter
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1 cup semisweet or dark chocolate chips
  • 1/2 cup peanut butter
 

Instructions:

  1. Prepare the Oat Mixture:
    • In a deep saucepan over medium heat, melt the butter and brown sugar until the sugar is fully dissolved.
    • Add the rolled oats to the saucepan and cook for 3-4 minutes, stirring constantly to prevent burning.
  2. Melt Chocolate and Peanut Butter:
    • In a separate bowl, combine the chocolate chips and peanut butter.
    • Microwave or melt using a double boiler until smooth.
  3. Assemble the Bars:
    • Line a baking pan with parchment paper.
    • Spread half of the oat mixture into the pan.
    • Pour the melted chocolate and peanut butter mixture over the oats.
    • Top with the remaining oat mixture.
    • Optionally, reserve a small amount of the chocolate mixture to drizzle over the top for added visual appeal.
  4. Chill and Serve:
    • Refrigerate the bars for several hours until set.
    • Before serving, let the bars stand at room temperature for a few minutes to soften slightly for easier slicing.
 

Notes:

  • The thickness of the bars can be adjusted by using different sizes of baking pans. A larger pan, such as 10-11 inches, will yield thinner bars.
  • Avoid cooking the butter and sugar mixture for too long; it should just melt enough to combine well to avoid a crumbly texture once set.
  • For best results, use quick-cooking oats as they're easier to chew in the final product.
