Ingredients:

  • 2 lb cherry tomatoes (any variety or color)
  • ½ bunch parsley (about ½ cup finely chopped)
  • 2 large garlic cloves, minced
  • 1½ cups light Italian dressing (avoid creamy varieties)

 

Instructions:

  1. Rinse and slice the cherry tomatoes in half.
  2. In a glass mixing bowl or quart-sized glass jar with a lid, combine the sliced tomatoes, chopped parsley, and minced garlic.
  3. Pour in 1½ to 2 cups of Italian dressing, just enough to lightly cover the tomatoes.
  4. Stir well, cover, and let marinate at room temperature for at least 2-4 hours, or refrigerate overnight for even better flavor.

 

 

Notes:

  • Any type of ripe baby tomatoes will work for this recipe.
  • Avoid using creamy Italian dressing, as it will alter the texture.
  • These marinated tomatoes taste best when given enough time to absorb the flavors, making them a great make-ahead dish for parties or meal prep.
