Ingredients:
2 lb cherry tomatoes (any variety or color)
½ bunch parsley (about ½ cup finely chopped)
2 large garlic cloves, minced
1½ cups light Italian dressing (avoid creamy varieties)
Instructions:
Rinse and slice the cherry tomatoes in half.
In a glass mixing bowl or quart-sized glass jar with a lid, combine the sliced tomatoes, chopped parsley, and minced garlic.
Pour in 1½ to 2 cups of Italian dressing, just enough to lightly cover the tomatoes.
Stir well, cover, and let marinate at room temperature for at least 2-4 hours, or refrigerate overnight for even better flavor.
Notes:
Any type of ripe baby tomatoes will work for this recipe.
Avoid using creamy Italian dressing, as it will alter the texture.
These marinated tomatoes taste best when given enough time to absorb the flavors, making them a great make-ahead dish for parties or meal prep.
