Ingredients:

  • 3 cups elbow macaroni
  • 1 ½ cups mayonnaise
  • ⅓ large onion, finely minced
  • ¼ cup fresh parsley, chopped
  • 2 tablespoons yellow mustard
  • 2 teaspoons rice vinegar
  • 1 teaspoon white sugar (or adjust to taste)
  • ¾ teaspoon celery seed
  • ½ teaspoon salt
  • 3 hard-boiled eggs, chopped
 

Instructions:

  1. Prepare Ingredients: Gather all the ingredients before you begin.
  2. Cook the Macaroni: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook for about 8 minutes, or until firm to the bite. Stir occasionally. Drain the macaroni.
  3. Cool the Macaroni: Rinse the cooked macaroni under cold water until it’s cool to the touch, then drain it again.
  4. Make the Dressing: In a large bowl, mix together the mayonnaise, minced onion, chopped parsley, mustard, rice vinegar, sugar, celery seed, and salt until well combined.
  5. Combine: Add the cooled macaroni and chopped hard-boiled eggs to the dressing. Stir gently until everything is evenly coated.
