Notes

Ingredients

  • 1 cup white sugar
  • ½ cup butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup sour cream (key to the moistness!)
  • ½ cup chopped walnuts (optional)
  • 2 medium ripe bananas, sliced

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set aside.
  2. In a large bowl, mix together the sugar and melted butter until smooth.
  3. Add the eggs and vanilla extract, and stir until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
  6. Fold in the sliced bananas, sour cream, and walnuts (if using) until evenly distributed.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for about 1 hour, or until a toothpick inserted into the center comes out clean.
  9. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
  10. Slice and enjoy! Best served warm or at room temperature.

Tips for Success

  • Use very ripe bananas for the sweetest flavor and moistest texture.
  • Don’t skip the sour cream — it's the secret to making this bread rich and tender.
  • Optional add-ins: Try chocolate chips or swap walnuts for pecans for a fun twist!

Storage Tips

  • Room Temperature: Store in an airtight container with a paper towel on the bottom and top to absorb moisture — keeps fresh for up to 4 days.
  • Freezing: Wrap tightly and freeze for 2 to 4 months. Thaw overnight at room temperature.
