Notes

Ingredients:

  • 2 English cucumbers, sliced thinly
  • ½ large red onion, sliced thinly
  • ¼ cup apple cider vinegar
  • 1 tablespoon honey (or agave nectar)
  • 1 teaspoon sea salt
  • 2 tablespoons fresh dill, chopped
  • Fresh chives, chopped (optional, for garnish)
  • Freshly ground black pepper, to taste
 

Instructions

  1. In a large bowl, combine the cucumbers, red onions, apple cider vinegar, honey, and sea salt. Toss until well-coated.
  2. Chill the salad in the refrigerator for 20 minutes to allow the flavors to meld.
  3. Transfer to a serving bowl, discarding any excess liquid.
  4. Garnish with fresh dill and chives (if using), and season with black pepper to taste.
  5. Serve immediately.
