Notes

Ingredients:

  • ¼ cup crumbled feta cheese
  • 1 tablespoon harissa or pesto
  • 1 large egg
  • 1 tablespoon chopped fresh dill or basil
  • Avocado oil cooking spray
  • 1 small tortilla
 

Instructions:

  1. Preheat the skillet
    • Heat a small skillet over medium heat.
  2. Prepare the feta
    • Distribute the feta cheese around the perimeter of the skillet.
    • Allow the feta to melt and crisp for about 2-3 minutes.
  3. Add harissa or pesto
    • Place the harissa or pesto in the center of the skillet.
    • Crack the egg carefully over the harissa or pesto.
  4. Cook the egg
    • Cook the egg to your desired doneness (3-5 minutes).
  5. Finish the feta and egg
    • Once the egg is cooked and the feta is golden brown, sprinkle with fresh dill or basil.
    • Gently transfer the feta and egg onto a plate using a spatula.
  6. Prepare the tortilla
    • Spray the skillet with cooking spray and add the tortilla.
    • Cook until lightly golden on both sides, about 1-2 minutes per side.
  7. Serve
    • Place the crispy feta and egg on top of the tortilla.
    • Serve immediately.
