Ingredients

For the Meatloaf:

  • 2 lbs ground beef (85% or 80% lean)
  • 1 medium onion (1 cup), finely chopped
  • 1 tsp olive oil
  • 2 large eggs
  • 3 garlic cloves, minced
  • 2 Tbsp ketchup
  • 3 Tbsp fresh parsley, finely chopped
  • 3/4 cup Panko breadcrumbs (or gluten-free alternative)
  • 1/3 cup milk
  • 1 tsp salt (or to taste)
  • 1 tsp Italian seasoning
  • 1/2 tsp ground black pepper

For the Glaze:

  • 3/4 cup ketchup
  • 1 ½ tsp white vinegar
  • 2 Tbsp brown sugar
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

 

Instructions

  1. Preheat & Prep: Preheat oven to 350°F and line a rimmed baking sheet with parchment paper or foil.
  2. Sauté Onions: Heat 1 tsp olive oil in a skillet over medium heat. Add onions and cook until softened and golden (5-7 minutes). Let cool.
  3. Mix Meatloaf: In a large bowl, combine all meatloaf ingredients. Mix gently until just combined to prevent a dense texture.
  4. Shape & Bake: Form into an 8x4x3-inch loaf on the prepared baking sheet. Bake uncovered for 40 minutes.
  5. Prepare the Glaze: Whisk all glaze ingredients together in a small bowl.
  6. Glaze & Finish Baking: Spread the glaze over the meatloaf and bake for another 20 minutes, or until the internal temperature reaches 160°F.
  7. Rest & Serve: Let the meatloaf rest for 10-15 minutes before slicing for best results.

 

Tips & Variations

  • Meat Substitutes: Swap half the beef with ground turkey, chicken, or pork for a different flavor. Poultry should be cooked to 165°F.
  • Loaf Pan Option: Bake in a parchment-lined loaf pan at 375°F for even cooking.
  • Avoid Overmixing: Overworking the meat mixture can lead to a tough texture.
