Notes

Ingredients:

  • 2 tbsp oil
  • 2 lbs beef (cut into cubes)
  • 8 oz mushrooms (chopped)
  • 1 large carrot (chopped)
  • 1 yellow onion (diced)
  • 3 bay leaves
  • 3 garlic cloves (pressed)
  • 4 cups beef broth
  • 1/2 cup barley
  • 1 tbsp salt (adjust to taste)
  • 1 tsp pepper (adjust to taste)
 

Instructions:

  1. Preheat a pot and heat the oil.
  2. Add the beef cubes to the pot and brown them.
  3. Add the chopped onion, carrot, and mushrooms to the beef, sautéing until the vegetables become slightly golden.
  4. Season the mixture with salt, pepper, bay leaves, and garlic.
  5. Pour in the beef broth and bring to a simmer over medium heat.
  6. Cover the pot and let it cook for 45 minutes.
  7. Stir in the barley and cook for an additional 20 minutes, or until the barley is tender.
  8. Serve the soup hot and enjoy!
