Notes

Ingredients:

  • 2 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter
  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 2 large egg yolks
  • 3 teaspoons vanilla extract
  • 10 ounces chocolate chips (milk or semi-sweet, depending on your preference)
  • Flaked salt, for topping

Instructions:

  1. Preheat Oven: Set your oven to 350°F (175°C).
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Prepare Skillet:
    • Heat a 12-inch oven-safe skillet (preferably cast iron) over low heat for about 5 minutes.
    • Add the butter and let it melt completely.
    • Once melted, stir in the brown sugar and granulated sugar using a wooden spoon.
    • Remove the skillet from the heat (or turn off the burner).
  4. Add Eggs:
    • In a separate bowl, whisk together the egg and egg yolks.
    • Quickly add them to the warm butter-sugar mixture in the skillet, stirring immediately to avoid cooking the eggs from the residual heat.
    • Mix in the vanilla extract.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients into the skillet, stirring until just combined. The dough will be thick, but continue mixing until fully incorporated. Wipe off any excess flour from the sides of the skillet with a damp paper towel if needed.
  6. Add Chocolate Chips: Stir in the chocolate chips until evenly distributed.
  7. Bake: Transfer the skillet to the preheated oven and bake for 20 to 25 minutes, or until the center is mostly set.
  8. Finish & Serve: Remove from the oven, sprinkle with flaked sea salt, and serve warm with vanilla ice cream.

Recipe Notes:

  • For a twist, use a mix of milk and dark chocolate chips.
  • Make sure to turn off the heat before adding the eggs to prevent cooking them!

  1. Can I use a different skillet if I don’t have cast iron?

Yes, you can use any oven-safe skillet you have on hand! Cast iron gives the best crispy edges, but a stainless steel or non-stick skillet will work just as well. Just make sure to grease it well!

  1. How do I prevent the cookie from becoming too hard?

To keep your skillet cookie soft and gooey, bake it until the edges are golden, but the center is still slightly underbaked. It should set perfectly as it cools. Keep an eye on it during the last few minutes!

  1. Can I make the dough ahead of time?

Absolutely! You can prepare the dough and store it in the fridge for up to 1-2 days, or even freeze it for 2-3 months. Just let it come to room temperature before baking.

  1. Is it necessary to use both brown and granulated sugar?

Yes, using both types of sugar is key. Brown sugar adds moisture and a caramel flavor, while granulated sugar gives the cookie the perfect crisp texture. Stick to the recipe for the best results!

  1. Can I add other mix-ins to the cookie?

Definitely! You can mix in up to 1½ cups of your favorite ingredients like chopped nuts, white chocolate chips, or even swirls of peanut butter or caramel. Just be sure to fold them in with the chocolate chips before baking.
