I have a weakness for creamy chicken dinners. Properly creamy.
The kind where the sauce clings to every bite and begs to be spooned over pasta.
But I don’t always have the patience for stovetop babysitting.
Some nights, I want big flavor without hovering over a pan.
Enter this Crockpot Tuscan Chicken. Chicken breasts simmer gently in a rich parmesan cream sauce with sun-dried tomatoes and garlic.
It takes just 10 minutes to assemble, then the slow cooker quietly works its magic.

No splattering pans. No constant stirring.
Just tender, juicy chicken wrapped in a velvety sauce that tastes far more high-effort than it actually is.
This is the kind of dinner that makes people wander into the kitchen asking,
“Is it ready yet?”

For Crockpot Tuscan Chicken
- Chicken Breasts – Boneless, skinless chicken breasts become incredibly tender in the slow cooker. You can also substitute boneless skinless chicken thighs if you prefer darker meat.
- Italian Seasoning – Adds classic herb flavor to the chicken. Homemade or store-bought both work perfectly.
- Onion Powder – Gives a subtle savory depth without overpowering the sauce.
- Kosher Salt and Cracked Black Pepper – Essential for enhancing all the flavors in the dish.
- Chicken Broth – Forms the base of the sauce and keeps the chicken moist while it cooks.
- Heavy Cream – Creates the rich, velvety texture that makes this dish so indulgent.
- Sun-Dried Tomatoes – Bring a slightly sweet, tangy flavor that balances the creamy sauce beautifully.
- Garlic – Fresh minced garlic adds bold flavor and aroma.
- All-Purpose Flour – Helps lightly thicken the sauce as it cooks.
- Parmesan Cheese – Melts into the sauce for a salty, nutty finish.
- Baby Spinach – Stirred in at the end for a pop of freshness and color.

Notes
Ingredients
- 4 boneless skinless chicken breasts
- 2 teaspoons Homemade Italian Seasoning or store-bought
- ½ teaspoon onion powder
- Kosher salt and cracked black pepper to taste
- ½ cup chicken broth
- 1 cup heavy cream
- ½ cup sun-dried tomatoes drained and chopped
- 2 cloves minced garlic
- 1 tablespoon all-purpose flour
- ½ cup grated Parmesan cheese
- 1 cup chopped baby spinach
Instructions
- Coat all sides of the 4 boneless skinless chicken breasts with 2 teaspoons Homemade Italian Seasoning, ½ teaspoon onion powder, and Kosher salt and cracked black pepper to taste. Make sure both sides are evenly seasoned.
- Lightly coat the interior of the crockpot with nonstick cooking spray. Arrange the seasoned chicken breasts in a single layer at the bottom.
- In a mixing bowl, combine ½ cup chicken broth, 1 cup heavy cream, 2 cloves minced garlic, ½ cup sun-dried tomatoes, 1 tablespoon all-purpose flour, and ½ cup grated Parmesan cheese. Whisk until smooth.
- Pour the prepared sauce mixture over the chicken in the crockpot.
- Cover and cook on high for 3 hours, or on low for 5 hours.
- Just before serving, stir in 1 cup chopped baby spinach. Place the lid back on and let the spinach soften for a few minutes.
- Taste and adjust with additional salt and pepper if needed. Serve over cooked pasta.

- Can I use frozen chicken?
I recommend thawing the chicken first for the best texture and even cooking. If you must use frozen, cook on low and allow extra time, making sure the internal temperature reaches 165°F. - Can I use chicken thighs instead of breasts?
Yes! Boneless, skinless chicken thighs work great and turn out even juicier. No changes to the cook time are needed. - How can I thicken the sauce?
If you prefer a thicker sauce, mix a little cornstarch with cold water and stir it in during the last 20–30 minutes of cooking. Let it cook on high until it thickens to your liking. - Can I make this ahead of time?
Absolutely. You can assemble everything in the slow cooker insert, cover, and refrigerate overnight. The next day, simply place it in the slow cooker and cook as directed. - What should I serve this with?
This creamy chicken is perfect over pasta, rice, or mashed potatoes. It’s also delicious with crusty bread to soak up every bit of that sauce.
